Foooood!

I have no idea what has come over me!  I've been eating like crazy the past 3 days!  Soooo not good since I am trying to shed some lbs. to be able to reach my ideal race weight (100lbs.).  Just 5 more to go and I cheat mid-week!

It started the other night.  You see, I only have red meat during the weekends but we went to a Filipino Birthday Party which served Kare-Kare (Oxtail in Peanut Sauce) and Pork Adobo.  They looked so good and I thought I heard them say, "Eat me!" -- SERIOUSLY!  Normally, I would be a disciplined dieter/healthy-eater and answer, "No", to these strange voices.  But this time, I GAVE IN!  Baaaad!  And I had white rice!!! *faints*

1.  I never have rice at night unless I am carbo-loading.
2.  I do not eat WHITE rice.  Only brown.

Ayayay!  And then, as if I wasn't rebellious enough.... I had red velvet cake after!  Ugh!

Fast forward to the next day...I had lunch with my friend, Cris, and my god-son, Aiden.  We were SUPPOSED to hang out and have lunch at Whole Foods, but we got lost.  And guess where we ended up?  First we went to Sprinkles and then had lunch at The Cheesecake Factory.  How did we end up there?!  Talk about being at the other side of the spectrum!

So we had pasta for lunch, shared a banana muffin from Sprinkles and got 2 more of those deadly delish cupcakes which I shared with Mike and Mikah after dinner that night.

I did 70 burpees and 50 leg raises.  You think that got rid of the cake and cupcakes I had? I HOPE SO!

I feel so guilty today.  Thank goodness I am scheduled to do some spweedwork today.  That should burn it all off, right?  RIIIIIGHT???

Now I am craving for chips!  WTH?!  So, instead I am making Baked Kale chips which are healthier.  Finally, a healthy food choice!  So, I am ending this foodie rant with the recipe of these yummy (and healthy) dark leafy veggie chips. Bob Harper says, "Kale is a miracle food."


Baked Kale Chips
serves 6


Ingredients

1 bunch kale
1 tablespoon olive oil
1 teaspoon seasoned salt

Directions

Preheat an oven to 350 degrees F (175 degrees C). Line a non insulated cookie sheet with parchment paper.
With a knife or kitchen shears carefully remove the leaves from the thick stems and tear into bite size pieces. Wash and thoroughly dry kale with a salad spinner. Drizzle kale with olive oil and sprinkle with seasoning salt.
Bake until the edges brown but are not burnt, 10 to 15 minutes.

  2. cookies are the devil in disguise. Doesn't matter what kind either...oatmeal, raisin, chocolate chips, peanut butter, oreos, fig newtons, chips ahoy......doesn't matter and the fact that I love coffee just makes it so easy at night after dinner to have a cup of coffee and cookies....like a happy marriage.

    OK, time to go eat an apple....LOL!

  3. Oh now that cake looks divine and I'm drooling over the Filipino dish mentions. LOL (My mom is Filipino. ;)) Oh, and thanks so much for posting the Kale Chips recipe. I've been wanting to know how to make them for some time. :)
